Why 500,000+ Customers Keep Coming Back

Love the hatches chilies.I'm from Colorado so I grew up getting the chilies roasted. I've used hatches chilies for my green chilie.

My chile is in the freezer, all flame blistered and packed. Ready for garlic salt and wonderful flavor in numerous dishes. We haven't lived in Las Cruces in close to 40 years but do our best to find some New Mexico green chile every year. Yours is wonderful.

The green chili came well packed and fresh and in good shape. We got medium heat and feel it is acurate, with an occasional hotie. Would order again.

Fresh Hatch Chile is THE BEST green chile anywhere. Incredible flavor and aroma.

I LOVE these chilies! This season was definately a "trying season" with the delays and field issues, but in the end they are worth the wait. The day I got the chilies I roasted most of them and created some fabulous chile verde. Time to enjoy, see you next season.

The chile arrived in excellent condition - fresh, vibrant, and ready to roast. It is very tasty and much appreciated.

Great product. Pairs great with the pinto beans.

I received my box of chilies 3 days after they were picked. After I roasted and peeled them I made a pot of pork green chili. The flavor from the chilies was fantastic with just enough heat to give it a nice kick. I will definitely be ordering more next year.

As transplanted New Mexicans, we always order 50-75 lbs of their fresh green chile from these folks. We are always happy with the quality, flavor and speedy service they provide. We have a special chile freezer and enjoy green chile thruout the year. You can't go wrong with ordering from The Hatch Chile Store!

Great flavor but I would rate it mild rather than medium. Plan to order again next spring.

We absolutely love the mild green chile! We put it on almost everything we eat. Can't eat scrambled eggs without it!!!!!

I have always ordered the Jarred hot green chilies, but once I saw they offered fresh green chilies. I ordered 25 lb. Immediately roasted them, chopped them and sealed them for freezer use. I used to live in Arizona when I could get them all the time, now that I live in North Carolina I have to order them. They are delicious. I recommend them to all

Same as above. I am going to enjoy Hatch green chili but I really prefer Hot and it’s not hot.

I love that I get to have green chile from Hatch anytime I want it. If I only use some of the jar I can refrigerate the rate or freeze it. I can use it all yr round. I used to but the chiles and roast them but now I don’t have to. I really love this brand.

Never tried this product before. All I can say is 5 stars.

I have used Hatch Green Chile for I believe 40 years. Nothing equals the awesome taste. I stay with basic enchiladas and burritos. I've never been disappointed. Even when first trying different recipes. Lave their flavor!
Jeffrey G · Verified
Absolutely delicious. My brother in law is the one who sent me my first jar. I was hooked.
Nancy S · Verified
It was mild enough my wife could eat it. She loves chili but meds she's on she can't stand any heat. Flavor was great. You can tell it is fresh by the bright red color not like a lot of chili that has been run through a drier.
Stanley D · Verified
This is my favorite. I ordered more of this. Also I put this on everything mashed potatoes, meatloaf stuffed peppers, chicken hamburgers, cheeseburgers, hotdog you name it I think I put it on just about everything but cereal.!
Scott D · Verified
One of the BEST salsas I have ever had !! We like the mild but I’m sure all heat levels are just as good !!

Lumbre is Spanish for fire, and the name is accurate. This is the hottest variety we carry — a Hatch Valley chile that runs 12,000+ SHU (X-Hot; varies year to year) and was bred specifically for chileheads who find Big Jim (~6,500 SHU, Medium) too mild and Sandia Select (~9,500 SHU, Hot) not quite enough. Lumbre sits well above our Hot tier; it delivers serious, building heat that lingers. It's significantly hotter than a jalapeño but well short of habanero territory (about one-tenth of habanero's heat). If you're not already comfortable eating hot chiles, this is not the right starting point.

The same Hatch Valley growing conditions that make Big Jim and Sandia exceptional — alkaline Rio Grande bottomland soil, high elevation, the swing between hot desert days and cool nights — work in Lumbre's favor too. The flavor underneath the heat is still distinctly Hatch: roasted, complex, earthy. It's not just pepper heat with nothing behind it. But the heat is real and significant, and it should be the deciding factor when you're choosing between varieties.

We carry a small, curated selection of Lumbre products — frozen green chile, pure sauces, and blends. Lumbre works best when its intensity is the point: a spicy green chile stew, a hot sauce that actually earns the name, or a blend mixed with milder chile for controlled heat. See our Heat Level Guide for a full comparison, or our Recipes page for ideas on working with extra-hot chile.

Frequently Asked Questions

How hot is Lumbre compared to other Hatch varieties?
Lumbre runs 12,000+ SHU and varies year to year — it's our X-Hot variety. For reference, Big Jim sits around 6,500 SHU (Medium; varies plant-to-plant) and Sandia Select around 9,500 SHU (Hot). Lumbre is significantly hotter than a jalapeño (2,500–8,000 SHU), comparable to the low end of a serrano, and well short of habanero territory (100,000+ SHU — Lumbre is roughly one-tenth that heat). Expect a heat level that requires respect. See our Heat Level Guide for the full lineup.
Is Lumbre appropriate for kids or heat-sensitive adults?
No. Lumbre is not family-friendly in terms of heat. If you're cooking for anyone who doesn't actively seek out spicy food, use Big Jim (Medium, ~6,500 SHU) or Sandia Select (Hot, ~9,500 SHU) instead. Lumbre is for cooks who already know they want serious heat.
Can I mix Lumbre with milder chile to control the heat?
Yes, and that's a common approach. Blend Lumbre with Big Jim or Sandia Select roasted chile to dial in the heat level you want. Start with a small ratio of Lumbre — 20 to 30 percent — and adjust from there. The Hatch flavor carries through even in small amounts.
Are Lumbre products gluten-free?
Our plain Lumbre frozen chile and pure sauces are naturally gluten-free. Check individual product labels for full allergen details on any prepared or blended products.
Why carry such a hot variety when most of your customers prefer mild or medium?
The Hatch Valley has always produced a range of heat levels — that's part of what the valley's growing environment does. Lumbre represents the upper end of that range authentically. Chileheads are a real part of the Hatch chile community, and a lineup that stopped at medium wouldn't be honest to the full range of what Hatch Valley farms produce.

We know you're wondering.

Hatch Chile is a protected regional designation — like Champagne or Vidalia onions — for chile grown exclusively in the Hatch Valley of southern New Mexico. The valley's mineral-rich Rio Grande soil, 300+ days of intense sunshine, and 40-degree temperature swings between day and night are why Hatch chile tastes like nowhere else. Most "green chile" in grocery stores is Anaheim — a milder, less complex pepper mass-produced in California or Mexico. All of our products are Hatch Chile Association certified, meaning they were grown in the Hatch Valley, not relabeled from another region.

Frozen products ship on Tuesdays or Wednesdays according to the destination ZIP and service. Economy generally takes 1–3 business days by ZIP in the lower 48; Alaska and Hawaii are Overnight only. Fresh chile ships on Wednesdays during harvest, with Overnight or 2-Day Air options. Overnight is recommended and is the only speed we guarantee. Check the shipping guide and fresh chile product page for current availability and expected dates.

Medium is our most popular heat level and what we recommend for first-timers — it has a pleasant, building warmth that lets you taste the signature smoky-sweet Hatch flavor without overwhelming heat. Mild is perfect for kids, spice-sensitive palates, or dishes like rellenos where you want flavor without the kick. Hot delivers the classic New Mexican heat that restaurants in Albuquerque and Santa Fe are known for. X-Hot is for serious heat seekers only. When in doubt, start Medium — you can always go hotter next time.

Roasted frozen Hatch chile lasts 12+ months at 0°F without significant quality loss — this is how most New Mexicans stockpile their annual supply and enjoy Hatch chile year-round. We recommend portioning into meal-sized bags and pressing out as much air as possible before freezing. Our jarred sauces, salsas, and dried products like red chile pods and powders are shelf-stable for 12–18 months in your pantry.

Five generations later, we still farm 300+ acres and grow 10+ cultivar varieties including Big Jim, Sandia Select, and Lumbre. Every product here is made with Hatch Chile Association certified chile — grown in the Hatch Valley of southern New Mexico by our 5th-generation family farm, not Anaheim or imported chile sold under the Hatch name.
