I used them to make my breakfast green chile sauce with my hot sandia chile that i roasted and freezed last year i thought it would be to hot because i normally use the big jims but the medium chile sauce came out perfect i couldnt tell the difference. all in all its very good. My only suggestion would be to put that same batch of mild, medium, and hot in 4 oz cans for a longer shelf life and you want need shipping protection also if you did not want to roast your own chile this would be easer to just open cans and make your green chile sauce etc.

Reminds me of living there (in a good way). The flavors and heat were as advertised, which is getting rare in the space. Hot was HOT. Perfect in a breakfast burrito.

This is the best green chili sauce I have ever had!!!

Had it with my taco's last night, great flavor. I can't wait to try it on other things. I live in Kansas now after growing up in New Mexico. It's hard to find good green chili here. Will keep ordering from you.

I very much like the hot sauce, it's a "fresh" way to add heat to other condiments. I've used the Hatch Hot with General Tso sauce to bring the heat, and I've used the Hatch 575 Hot to add heat to pizza sauce ! I got my jar last week, and it's half gone already. I Love your ad where your man is eating a double burger from the tailgate while pouring on the Chili..."We don't sell water"...Love that add, watched it 8 times..! I look forward to ordering more and trying the different varieties.

Really different from green. That's a good thing. A bit hotter and that's not to hot at all. Like them both

This sauce is among the best ever made, best I've had but I've not been out of my state to try a majority of them but even so I'd guarantee this is still among the best. Took 1 bottle to work just for people trying try a small amount and take the rest home and everyone loved it so much,it's about gone in 2 days. Glad I got 2.

575 (NuMex 575) is the next-generation Hatch chile cultivar developed at New Mexico State University. Released as a refinement of the legendary Big Jim variety, NuMex 575 delivers longer, more uniform pods with the same deep Hatch flavor — and the harvest-quality consistency commercial growers had been chasing for years.

Every 575 product below is made from our own family's 575 harvest in the Hatch Valley. Pure 575, picked at peak ripeness, fire-roasted at our facility, and bottled within days. The flavor you get is exactly what comes off the field — no blends, no fillers, no shortcuts.

If you've cooked with our Big Jim Hatch chile and loved it, 575 is the natural next step: same Hatch Valley terroir, refined cultivar genetics, deeper consistency season-to-season.

Frequently Asked Questions

What is 575 Hatch chile?
NuMex 575 is a Hatch green chile cultivar developed and released by New Mexico State University (NMSU). It was bred as the next generation of the popular Big Jim variety — longer, meatier, more uniform pods that hold their flavor and heat consistently across the harvest. 575 is grown in the same Hatch Valley terroir as our other Hatch chile varieties.
How is 575 different from Big Jim Hatch chile?
575 is a refinement of Big Jim, developed by NMSU plant breeders to deliver more consistent pod size and quality. Both share the same Hatch Valley terroir and similar flavor profile, but 575 produces longer, meatier pods with better harvest-to-harvest consistency. Heat levels are comparable (medium-hot range).
What heat level is 575 Hatch chile?
575 typically falls in the medium-hot range, around 4,000–8,000 Scoville Heat Units depending on growing conditions. Slightly hotter than mild Hatch varieties, similar in heat to Big Jim. If you want more heat, our Lumbre (X-Hot) or Sandia varieties run hotter.
What can I cook with 575 Hatch chile sauce?
Anywhere you'd use a green chile sauce — green chile enchiladas, smothered burritos, chile verde stew, eggs, breakfast burritos, posole, queso, or a finishing sauce over grilled meats. Our 575 green chile sauce is jarred and shelf-stable — open the jar and use it.
Is 575 the same as Sandia or Lumbre?
No — they're distinct cultivars. 575 (NuMex 575) is the refined Big Jim heir from NMSU. Sandia is a classic NMSU-bred variety from the 1950s, hotter and more compact. Lumbre is the hottest of the New Mexican commercial cultivars (X-Hot range). All three are grown in the Hatch Valley.
Where can I learn more about Hatch chile varieties?
Our Heat Level Guide covers the full Hatch chile variety lineup — Anaheim, Big Jim, Sandia, Lumbre, 575, and more — with heat levels, flavor notes, and which to use for which dish.

We know you're wondering.

Hatch Chile is a protected regional designation — like Champagne or Vidalia onions — for chile grown exclusively in the Hatch Valley of southern New Mexico. The valley's mineral-rich Rio Grande soil, 300+ days of intense sunshine, and 40-degree temperature swings between day and night are why Hatch chile tastes like nowhere else. Most "green chile" in grocery stores is Anaheim — a milder, less complex pepper mass-produced in California or Mexico. All of our products are Hatch Chile Association certified, meaning they were grown in the Hatch Valley, not relabeled from another region.

Frozen products ship on Tuesdays or Wednesdays according to the destination ZIP and service. Economy generally takes 1–3 business days by ZIP in the lower 48; Alaska and Hawaii are Overnight only. Fresh chile ships on Wednesdays during harvest, with Overnight or 2-Day Air options. Overnight is recommended and is the only speed we guarantee. Check the shipping guide and fresh chile product page for current availability and expected dates.

Medium is our most popular heat level and what we recommend for first-timers — it has a pleasant, building warmth that lets you taste the signature smoky-sweet Hatch flavor without overwhelming heat. Mild is perfect for kids, spice-sensitive palates, or dishes like rellenos where you want flavor without the kick. Hot delivers the classic New Mexican heat that restaurants in Albuquerque and Santa Fe are known for. X-Hot is for serious heat seekers only. When in doubt, start Medium — you can always go hotter next time.

Roasted frozen Hatch chile lasts 12+ months at 0°F without significant quality loss — this is how most New Mexicans stockpile their annual supply and enjoy Hatch chile year-round. We recommend portioning into meal-sized bags and pressing out as much air as possible before freezing. Our jarred sauces, salsas, and dried products like red chile pods and powders are shelf-stable for 12–18 months in your pantry.

Every product we sell is Hatch Chile Association certified — your guarantee that the chile was grown in the Hatch Valley of New Mexico, not Anaheim or imported chile relabeled under the Hatch name. Our family has farmed the Hatch Valley since 1917 when our great-great-grandfather Joseph Franzoy became the first commercial chile farmer in the region. Five generations later, we still farm 300+ acres and grow 10+ cultivar varieties including Big Jim, Sandia Select, and Lumbre. Over 500,000 customers and 12,000+ verified 5-star reviews — you're buying from the source.

These are the products our 500,000+ customers come back for again and again. Every product here is made with Hatch Chile Association certified chile — grown in the Hatch Valley of southern New Mexico by our 5th-generation family farm, not Anaheim or imported chile sold under the Hatch name.
