Hatch Onion FAQs

Cool, dry, dark, and ventilated. A mesh bag in the pantry or a basket in the cellar is ideal. Do NOT store in plastic (traps moisture) or in the fridge (too humid). Keep away from potatoes (they make each other spoil faster).

Hatch chile + onion is a classic combination. Use them in green chile stew, breakfast burritos, queso, onion rings, pickled onions, French onion soup, or simply caramelized as a side.
