What’s the difference between Whole and Chopped?

WHOLE CHILE

Form: Chile is roasted then peeled, but left intact with seeds inside. Uses: Anything you want! Traditionally purchased to make chile rellenos, but you can chop and deseed it for use in other dishes.

CHOPPED CHILE

Form: After being roasted and peeled, the chile is destemmed, partially deseeded, and chopped into 1/2" squares. Uses: Great for everything (except rellenos). Add to burgers, eggs, stews, enchiladas, etc.

What’s the difference between Mild, Medium and Hot?

HOT

Heat Level: Strong, warm burn which lingers for a while. Not for the faint of heart! Scoville Scale: Generally ranges from 5,000 to 10,000 SHU. Flavor: While quite spicy, our hot still has that authentic flavor that makes Hatch Chile so famous!

MEDIUM

Heat Level: Moderate, providing a noticeable but manageable level of heat. Scoville Scale: Usually ranges from 2,500 to 5,000 SHU. Flavor: These chiles offer a balanced combination of heat and flavor, providing a kick without being overwhelming.

MILD

Heat Level: Low to very low. Scoville Scale: Generally ranges from 1,000 to 2,500 Scoville Heat Units (SHU). Flavor: These chiles have a rich, flavorful taste with minimal spiciness, making them suitable for people who prefer a subtle heat.

Product Description

Our Roasted Hatch Green Chile is the most convenient way to enjoy delicious, authentic New Mexican green chile. We do all the hard work for you (roasting, peeling, and packaging), then flash freeze your chile to ensure it stays fresh and ready to use throughout the year. All our frozen Hatch Green Chile is flame-roasted in the traditional New Mexican style, peeled by hand, and packaged in 1lb vacuum-sealed freezer bags. We ship frozen on dry ice in insulated containers.

We now ship ground to most US addresses and fill all orders for our roasted products out of two strategically located satellite warehouses. Rest assured, though, the chile is still grown, roasted, peeled, and frozen here in the sunny Hatch Valley of New Mexico!

Our roasted, frozen Hatch Green Chile is available whole (flame-roasted and hand-peeled) or chopped (flame-roasted, hand-peeled, then de-stemmed, partially deseeded, and chopped in small squares) in Mild, Medium, and Hot.

We cannot ship ths product to PO Boxes. Please use a physical address when checking out.

We ship all frozen products early in the week to ensure they arrive at your door prior to the weekend. This may result in orders placed after Wednesdays being held for shipment until the following week.
