Hatch Green Chile Chicken Salad

Ingredients

  •  1 cup mayonnaise
  •  4 Chopped & Roasted Hatch Green Chile, roasted and chopped
  •  1 lime
  •  1 clove garlic
  •  1 store-bought rotisserie chicken or 3 large chicken breast, cooked
  •  1 bunch green onions, chopped
  •  Salt and freshly ground pepper

Instructions

1. Puree the mayonnaise, Chopped, Roasted Hatch Green Chile, lime juice, and garlic in a blender or food processor until smooth.

2. Pull the chicken meat off the bones, shredding it with your fingers. Discard the bones and skin.

3. Put the Chicken meat in a large bowl with the green onions. Spoon the Hatch Chile mayonnaise into the bowl and stir to combine. Add salt and pepper to taste.

4. Serve chilled
