Hatch Green Chile Enchiladas

How to Make Green Chile Syrup: Mix equal parts chopped and roasted green chile and with sugar in a bowl and let marinate overnight. Strain.Â
Add fresh lime juice, tequila, Cointreau, and Hatch Green Chile syrup to a shaker.
Use the squeezed lime peel to wet the rim of the glass and dip the rim in salt.
Add a scoop of ice.
Close and shake vigorously until the shaker becomes frosty on the outside. Pour over ice and garnish with lime and/or fresh jalapeño slices.
