Hatch Red & Green Chile Chorizo Spud Bowl

Ingredients

- 2 pounds potatoes (red or yukon gold)

- 1 cup Roasted Hatch Green Chile

- 1 jar Roasted Hatch Green Chile Sauce

- 1 jar Fresh Hatch Red Chile Sauce

- 1 package chorizo

-1/2lb shredded cheese

- 1 tbsp. garlic powder

- salt and pepper to taste

- 1 egg per person (optional)

- 1 tsp. garlic powder salt and pepper

- 1 tbsp. butter

Instructions

1. Cook chorizo over medium-low heat (about 5-7 min.)

2. Remove chorizo with a slotted spoon.

3. Evenly dice 2 pounds of potatoes.

4. Raise heat to medium-high and drop in potatoes. Leave them alone for 2-3 minutes to achieve a golden outer layer. Season with salt, pepper and garlic powder.

5. Cook potatoes until soft on the inside and golden-brown on the outside (about 7-10 minutes). Add Roasted and Chopped Hatch Green Chile to potatoes. Add the cooked chorizo and warm through.

6. Top it off with shredded cheese, Fresh Hatch Red Chile Sauce, Roasted Hatch Green Chile Sauce, plus an egg, sunny-side up, if you so desire.
