Mashed Potatoes:

  • 4 large potatoes, boiled and mashed
  • 1 stick butter
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1 cup green Chile chopped small

You could also use leftover mashed potatoes and add Hatch Green Chile

Breading:

  • 1 cup Panco crumbs crushed fine
  • 1/2 teaspoon garlic
  • 1 teaspoon Green Chile Powder
  • 4 tablespoons flour
  • Water to make a thin paste

Cheese:
8 oz. cheese, cubed. I used mozzarella

Instructions

  1. Boil, peel and chop potatoes.
  2. Add butter and mash.
  3. Add garlic salt and pepper.
  4. Add Hatch Green Chile and mix well.
  5. To the crushed Panco crumbs, add garlic salt and Hatch Green Chile Powder.
  6. Set aside.
  7. Add enough water to the flour to make a thin paste.
  8. Flatten a scoop of potato mixture. Place a cube of cheese in the middle and make a ball with the mixture.
  9. Dip the ball into the flour paste and roll in the crumbs.
  10. Place in the freezer for 30 minutes.
  11. Preheat the air fryer to 375. Cook for 10 minutes, turning once.

If you do not have an air fryer, these could be baked as well. If you want to fry them, leave them in the freezer for 2 hours and then fry.
